The Diabetes Club of Fox Valley held its January membership meeting Wednesday, Jan. 14, at Oak Street Restaurant, 945 Oak Street, in North Aurora.

Club vice president, Chuck Nelson, introduced guest speaker, Deepa Deshmukh, MPH, RDN, CDE, BC-ADM, a Functional & Integrative Nutrition Specialist and co-founder of DuPage Dietitians, 3080 Ogden Avenue, #104, in Lisle.
Deepa Deshmukh has numerous accreditations in the area of nutrition and has her own practice, as well as working with the VNA. She helped establish the first Kitchen Center, at the VNA, to help patients learn how to cook healthy meals.
Ms. Deshmukh believes in a plant based diet for optimal health, stating “We should eat lots of fiber and land based foods — beans, lentils, brown rice, fruit, and whole grain pasta — we don’t need a lot of protein”.
Stephen Saporta a patient of Deepa Deshmukh, explained how changing his diet saved his life. He stated “In December of 2024, he had chronic kidney disease, was diabetic for 25 years and weighed 291 pounds. He was looking at dialysis or a kidney transplant and possibly heart failure. He gave up meat and now follows a plant based diet. He has been in remission from diabetes and kidney disease for about six months now”.
Ms. Deshmukh mentioned two books that contain valuable information — “The China Study” and “Preventing & Reversing Heart Disease”.
