Ingredients
2 (10 inch) flour tortillas
2 tablespoons vegetable oil
1 small onion, chopped
1/2 red bell pepper, chopped
3 teaspoon minced garlic
1 (15 oz.) can black beans, rinsed and drained
1 teaspoon minced jalapeno peppers
3 ounces cream cheese
1/2 teaspoon salt
1/2 teaspoon cumin
1 teaspoon chili powder
1, 4 oz. can of diced green chiles
2 tablespoons chopped fresh cilantro
1/4 cup shredded cheddar cheese
Directions
1. Preheat oven to 350F. Wrap tortillas in foil and place in oven and bake for 15 minutes Leave oven on.
2. Heat oil in a 10-inch skillet over medium heat. Place onion, bell pepper, garlic, jalapenos, chili pepper, cumin, and diced green chiles in skillet, cook for 2 minutes stirring occasionally. Pour beans into skillet, cook 3 minutes and stir.
3. Cut cream cheese into cubes and add to skillet with salt. Cook for 2 minutes stirring occasionally. Stir cilantro into mixture.
4. Spoon mixture evenly down center of the warmed tortilla, add cheddar cheese, and roll tortillas up.
5. Place burritos back in oven for 5 minutes to melt cheese. Remove and serve.
Yield: 2 large burritos
