Recipe of the Week: Orange Cardamom Butter Cookies

Ingredients
1/2 pound unsalted butter, softened
1 cup granulated sugar
2 teaspoon fresh grated orange peel
3 tablespoon orange liqueur
1 egg yolk
1/4 teaspoon salt
2 cups all-purpose flour
1/2 cup almond flour
8 ounces bittersweet chocolate, melted

Directions

. Beat the butter and sugar together in the bowl of a stand mixer until light and creamy. Add orange peel, cardamom, orange liqueur and egg yolk and mix until blended. Mix in flours and salt until dry ingredients are incorporated. Divide dough into 4 logs and form into 2-inch by 6-inch logs, about 1-inch thick. Wrap each in waxed paper and refrigerate for a least 4 hours or overnight.
2. Preheat the oven to 350 degrees F. Line baking sheets with baking parchment and slice the chilled dough logs into 1/4-inch slices
and arrange on the baking sheet, leaving a 1-inch space between each cookie. Bake until lightly golden brown, about 10-12 minutes.
Place baked cookies on a cooling rack and cool completely. Line another cool baking pan with parchment paper and dip one long edge of each cookie in the melted chocolate. Place on the prepared pan and allow to cool until chocolate is set. Sprinkle a few festive holiday sprinkles over the cookies while the chocolate is melted.
