Recipe of the Week: Twice Baked Potatoes

Ingredients
4 large baking potatoes
1/2 cup of bacon bits
1 cup plain Greek yogurt
1/4 cup milk
2 tablespoons butter
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon garlic powder
1 cup shredded Cheddar cheese
8 green onions, sliced

Directions
1. Preheat oven to 350F.

2. Bake potatoes in preheated oven for 1 hour.

3. When potatoes are done allow them to cool for 10 minutes. Slice potatoes in half lengthwise and scoop out most of the potato into a large bowl, until about 1/4 inch of potato is left on the skin. To the potato bowl add greek yogurt, milk, butter, olive oil, salt, pepper, garlic powder, 1/2 cup cheese, and 1/2 the green onions. Mix with a hand mixer until well blended and creamy. Spoon the mixture into the potato skins. Top each with remaining cheese, green onions and bacon.

4. Bake for another 15 minutes.
