Recipe of the Week: Cracker Crusted Chicken

Ingredients
1 1/2 cups Cheez-Its, crushed
1 1/2 cups French-fried onions, crushed
1 tablespoon Italian spices
2 teaspoons sesame seeds, toasted
1/2 teaspoon ground black pepper
4 skinless, boneless chicken breast halves, cut in half
2 1/2 tablespoons mayonnaise
1/2 tablespoon yellow mustard

Directions

. Preheat oven to 375F. Spray a baking dish with cooking spray.

2. Mix cheese-flavored crackers, French-fried onions, Italian spices, sesame seeds, and pepper in a bowl. Set aside.

3. Wash and pat chicken breasts dry. Mix mayonnaise and mustard together and spread a thin layer on one side of each piece and place mayo-side down in the cracker mixture. Spread a thin layer of mayonnaise on the other side of the chicken and cover with the cracker mixture and press firmly into the chicken. Place chicken breasts on the prepared baking dish. Sprinkle remaining cracker mixture on top and lightly spray with cooking spray.

4. Bake in the preheated for 15-20 minutes and turn chicken over. Cook for another 15-20 minutes or until the chicken breasts are no longer pink in the center and juices run clear.
