Recipe of the Week: Zucchini Bread

Ingredients
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 tablespoon ground cinnamon
3 eggs
1 cup vegetable oil
2 ¼ cups white sugar
3 teaspoons vanilla extract
2 cups grated zucchini
1 cup chopped walnuts

Directions
1. Preheat oven for 375F and lightly grease a baking pan.

2. In a microwave safe bowl, mix the butter, olive oil, balsamic vinegar, garlic, soy sauce, pepper, and parsley. Cook for 2 minutes on High in the microwave, or until butter is melted.

3. Arrange chicken on the baking pan, and coat with the butter
mixture, reserving some of the mixture for basting.

4. Bake the chicken for 45 minutes, until juices run clear and stir once every 15 minutes
and baste with remaining butter mixture. Sprinkle with parsley to serve
